Vegan Chickpea Stew

2 Tbsp   –  Olive oil.                                   1 Tbsp –   Pure maple syrup

1             –         Medium onion, chopped             1 Tbsp –  Finely chopped fresh ginger

1.            –         Medium green bell pepper         1/2 tsp  – Sea salt or Himalayan salt

chopped.                                          1/2 tsp  – Ground black pepper

1.            –          Medium red bell pepper            1 dash  –  Ground cayenne pepper (optional)

chopped

2 cloves.   –        Garlic, coasrley chopped.           1           –  Medium head cauliflower, cut

into florets.

2 cups       –         Low-sodium veget broth.          1(10oz) bg –  Raw baby spinach

2cans(15oz)   –   Chickpeas (garbanzo).              1 cup.    –   Lite coconut milk

drained and rinsed.                  3 cups   –   Cooked quinoa

1 (14.5-0z.) cn  – Diced tomatoes, no salt added

1 Tbsp.                  Curry powder
